Ingredients

  • 1 Tbsp EVOO
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 28 oz canned, crushed tomatoes with juice
  • 1/2 lemon, zest only
  • 1/2 tsp dried red pepper flakes
  • 2 tsp balsamic vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 1 bay leaf

Preparation

  1. Heat EVOO over med-low heat in a large pot. Add onion and garlic and saute for 3-4 minutes - do not brown.
  2. Add tomatoes with juice, lemon zest, chili flakes, vinegar, sugar, salt and bay leaf. Heat over low heat for 15 minutes. That's it - although it gets better with time!
