Ingredients

  • 1/2 Tbsp EVOO
  • 1 Tbsp vegan butter
  • 2 Tbsp veggie broth
  • 1/2 onion, chopped a bit less than roughly
  • 1 garlic clove, minced
  • 10 oz spinach (trimmed and washed thoroughly if fresh or slightly defrosted and squeezed of a bit of water if frozen)
  • 1/2 cup soy milk (plain not flavored)
  • 1/4 tsp nutmeg and SnP
  • 1 tsp dried dill weed

Preparation

  1. Heat EVOO, butter and broth over medium-low heat. Add chopped onion and garlic and saute for 5 minutes.
  2. Turn up heat to medium and add thoroughly cleaned spinach. Continue to stir while it wilts down.
  3. Cook over medium heat for 10 minutes while liquid evaporates.
