Ingredients
4 oz unsalted butter
7 oz graham crackers
2 Tbsp brown sugar
10 oz cream cheese, at room temp
6 oz mild, creamy blue cheese, at room temp
2 Tbsp sugar
1 tsp salt
2 eggs
1 egg yolk
2 Tbsp half and half or heavy cream
1 tsp real vanilla extract
Preparation
Preheat oven to 325 degrees F.
In a small pot, melt the butter over slightly less than medium heat. Cook 10 minutes until it's a deep golden brown.
Add the brown butter, graham crackers and brown sugar to a food processor and mix until combined and starting to stick together.
Press flat into an 8" x 8" pan and bake for 10 minutes. Remove and set aside.
Meanwhile, whip the cream and blue cheeses, sugar and salt in a food processor until smooth, scraping the sides periodically. Add the eggs and yolk and pulse until combined.
Finally add the half and half and vanilla and pulse until combined.
Pour into the pan on top of the graham cracker base. Bake 30 minutes until firm and the edges are light brown. Remove from the oven and cool in the pan. When at room temp, wrap and refrigerate overnight before cutting.
